Dulce de leche, also known as manjar, manjar de leche, cajeta, or arequipe, is a traditional dairy product from South America, resulting from the cooking of two ingredients: milk and sugar. In Argentina, the Argentine Food Code stipulates and requires that for a product to be called “dulce de leche,” it must be made from cow’s milk, sugar, vanilla bean (or artificial vanilla essence), and a pinch of baking soda.
It is very versatile in its application, so there are various types:
Family, classic, or traditional
Used for spreading on toast and for certain desserts where its texture does not require great firmness, such as pancakes or as a flan accompaniment. Its brilliance and lightness are its main characteristics.
Pastry chef’s or “repostero”
Mainly used in cakes and pastries. It is more concentrated, opaque in appearance, and can be cut. Its firm consistency and smooth texture are ideal for spatula or piping work. It may contain vegetable substances to increase its consistency.
Alfajorero
Used in the preparation of alfajores and cones. It is similar to the pastry chef’s type but with more structure. Additionally, it has the particularity of retaining its original characteristics despite the passage of time.
Ice cream maker’s or “heladero”
It is of industrial use, especially for processing ice creams with dulce de leche flavor. It looks similar to the family type but with more color, shine, and flavor.
